New Gym Near the Whistling Swan Inn

I've joined the gym. Yes, it's been long overdue, so I took out a membership at Crunch Gym, which is a veritable stone's throw (quarter mile) from my New Jersey bed and breakfast, the Whistling Swan Inn. The gym just opened on May 15th, the equipment is brand new and their philosophy of "no judgment" is one I definitely subscribe to.

I am not in this Zumba class.
Best of all, my guests will not have to forego their regular workouts while they're on holiday at the Inn. I've got a whole stack of half-priced guest passes ($5 for each visit). So if you're an exercise enthusiast, ask me for a pass so you can "feel the burn" if you have a mind to while you're on holiday.

Party at the Whistling Swan Inn

It's event season at the Whistling Swan Inn, my bed and breakfast in the beautiful New Jersey Skylands. We kicked off the round of spring parties with a lovely First Communion party at the end of April. The weather was unseasonably warm, and we were able to serve lunch on the veranda.

The marriage bug seems to be biting overtime this year, with four weddings on the schedule for May and June. Last weekend, Tom and Lisa tied the knot at the Inn. Even the drizzle right when they were scheduled to say "I do" in the garden, did not dampen the festive spirit. Coordinating an event means being fast and flexible, so we quickly set up on the veranda, and the ceremony went off right on time.

Since taking over the Inn, my goal of delivering the best possible experience to my guests has enabled me to meet a variety of local business owners who have become treasured friends. Randi, a very talented florist and owner of Lockwood Farms, designed the flowers. Simple, yet exquisite, they added to the elegant atmosphere of the party.

Randi's floral masterpiece was rivaled only by the scrumptious cake. Suree, owner and resident artiste of KaliKakes, whipped up a magnificent three-tiered confection of white cake filled with strawberry preserves. She and Randi coordinated efforts so that the fresh flowers topping the cake matched the centerpieces exactly. An experienced pastry chef, Suree provides all the specialty cakes for the Inn. Scrumptious Blueberry Muffins Innside the Whistling Swan Inn

I love food. Yes, it's true, and I make no secret of it. A guest breakfast favorite at the Whistling Swan Inn is blueberry muffins. The following recipe is featured in my cookbook, Innside Breakfast. These delectable goodies can be made all year long using either fresh or frozen blueberries. One tip though. Invest in pure vanilla extract. It makes all the difference.

Blueberry Cream Muffins

4 eggs
2 cups white sugar
1 cup vegetable oil
1 tsp. vanilla extract
4 cups all-purpose flour
1 tsp. salt
1 tsp. baking soda
2 cups sour cream
1 cup blueberries

Preheat oven to 400 degrees F. Grease 24 muffin cups or line with paper liners. In large bowl beat eggs, gradually adding sugar while beating. Continue beating while slowly pouring in oil. Stir in vanilla. In a separate bowl, stir together flour, salt and baking soda. Stir dry ingredients into egg mixture alternately with sour cream, beginning and ending with dry ingredients. Gently fold in blueberries. Scoop batter into prepared muffin tins. Bake for 20 minutes, or until done.

I like to make these in the large muffin tins.
